- 1 pound of pizza dough
- All-purpose flour
- 2+ tablespoons of extra-virgin olive oil
- 6 ounces of trimmed scallions
- Kosher salt
- 1 cup of ricotta cheese
- 1 teaspoon of grated lemon zest
- Coarsely ground black pepper
- 1/4 cup of fresh basil leaves
- Grated parmesan cheese
Preheat your oven to 500 degrees, nice and hot. Take your dough and divide it into 4 equal pieces. Roll them into balls and flour them, then pound them out flat for the perfect little size of personal pizzas.
Bake until golden; this will take about 12 minutes.
Meanwhile, prepare a large skillet over medium heat. Toss on the scallions, olive oil, and salt to taste. Cook until these are wilted, which will take about 1 minute. Put the scallions on a cutting board and cut into little pieces to be your pizza topping.
Mix the ricotta, lemon zest, olive oil, and some salt and pepper in a bowl. Spread this mixture on top of your little personal pizzas along with the scallions and throw them back into the oven for two minutes. The cheese mixture will melt to the perfect temp.
Top the pizzas with fresh basil and parmesan and you have yourself a wonderful spring meal.
